Ingredients
  

For the cake
  • 2 cups all-purpose flour Use fresh or unbleached flour for best results.
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt Enhances the flavor.
  • 1/2 cup unsalted butter, softened Can substitute with melted coconut oil for a dairy-free version.
  • 1 cup milk Use any milk of your choice.
  • 1 teaspoon vanilla extract For added flavor.
For the strawberries
  • 2 cups fresh strawberries, sliced Use fresh strawberries for best flavor.
  • 1/4 cup sugar For macerating the strawberries.
For serving
  • Whipped cream For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add in softened butter and mix until the mixture resembles coarse crumbs.
  4. Pour in milk and vanilla extract, and mix until just combined.
  5. Pour half of the batter into the prepared dish and spread evenly.
  6. In another bowl, toss the sliced strawberries with the remaining sugar and let sit for 10 minutes.
  7. Layer the strawberries over the batter in the dish, then spread the remaining batter on top of the strawberries.
Baking
  1. Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing into bars and serve with whipped cream.

Notes

Serve chilled or at room temperature. For added appeal, top with extra strawberry slices.
