  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned Drain canned corn before use.
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper
  • optional crumbled feta cheese for garnish

Method
 

Preparation
  1. In a large bowl, combine the diced chicken, sweet corn, diced cucumber, and finely chopped red onion.
  2. In another bowl, mix the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken and vegetable mixture. Stir well to coat everything evenly.
  4. If using, add crumbled feta cheese on top for extra flavor.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

Serve chilled or at room temperature. This salad pairs well with tortilla chips or can be used as a filling in wraps or sandwiches. Garnish with extra cilantro or feta cheese for added freshness.
