Ingredients
  

Roll Ups
  • 4 large large tortillas or wrappers
  • 2 cups cooked turkey or chicken, shredded
  • 2 cups stuffing mix
  • 1 cup chicken broth can swap for vegetable broth for a vegetarian option
  • 1 cup creamy gravy (jarred or homemade)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded turkey or chicken with the stuffing mix and chicken broth until well combined.
  3. Lay a tortilla or wrapper flat, add a generous portion of the stuffing mixture, and roll it up tightly. Repeat with the remaining wrappers.
Baking
  1. Place the rolled-up tortillas in a greased baking dish.
  2. Pour the creamy gravy over the top of the roll ups.
  3. Cover the dish with foil and bake for 25 minutes.
  4. Remove the foil and bake for an additional 10 minutes until golden and bubbly.
Serving
  1. Serve warm, paired with fresh veggies or mashed potatoes.

Notes

If you want more flavor, add herbs like sage or thyme to the stuffing mixture. Feel free to swap out chicken broth for vegetable broth for a vegetarian option. Use different types of tortillas or wraps for added variety; spinach or whole wheat wraps work great too.
