Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/4 cup cold butter, cubed Use very cold butter for best texture.
  • 3/4 cup milk
  • 1 large egg, beaten For brushing the tops.
Flavor Ingredients
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh chives, chopped

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the sun-dried tomatoes and chives.
  5. Gradually add the milk, mixing until a soft dough forms.
  6. Turn the dough out onto a floured surface and knead gently.
  7. Pat the dough into a circle about 1 inch thick and cut into wedges.
  8. Place the scones on the prepared baking sheet and brush the tops with beaten egg.
Baking
  1. Bake for 15-20 minutes or until golden brown.
  2. Allow to cool slightly before serving.

Notes

Best served warm, enjoy plain or with butter or cream cheese. Pairs well with tea or coffee. For storing, let them cool completely and keep in an airtight container at room temperature for up to 2 days or refrigerate for up to a week. Freeze for longer storage.
