  • 6 large large eggs
  • 1 medium sweet potato, peeled and diced
  • 1 cup blueberries Fresh or frozen
  • 2 links sausage (your choice, cooked and crumbled)
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add diced sweet potato. Cook until tender, about 8 minutes.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Add cooked sweet potatoes, crumbled sausage, and blueberries to the egg mixture and stir to combine.
  5. Pour the mixture into a greased oven-safe skillet and cook on the stove for 2-3 minutes until the edges start to set.
  6. Transfer the skillet to the oven and bake for 20-25 minutes or until the frittata is set and lightly golden.
  7. Allow to cool slightly, then slice and serve. Garnish with fresh herbs if desired.

Notes

This frittata can be customized with different vegetables and fruits. It pairs nicely with a side salad or fresh fruit.
