Ingredients
  

For the Sweet Potatoes
  • 4 medium sweet potatoes Choose firmer sweet potatoes to ensure they hold their shape.
For the Taco Filling
  • 1 pound ground beef Can substitute ground turkey for a different twist.
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
For Toppings
  • 1 cup shredded cheese Feel free to experiment with different cheeses.
  • 1/2 cup sour cream
  • 1 cup lettuce, shredded
  • 1 medium avocado, diced
  • Olive oil For rubbing the sweet potatoes.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the sweet potatoes with a fork. Rub with olive oil, salt, and pepper, then place them on a baking sheet.
  3. Bake for about 45 minutes or until tender.
Cooking the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and diced tomatoes. Stir and cook according to package directions.
Assembly
  1. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
  2. Stuff each sweet potato with the taco meat mixture, then top with cheese, sour cream, lettuce, and avocado.
Serving
  1. Serve immediately and enjoy! Best served warm with the option to add extra toppings.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat in the microwave or oven.
