  • 14 oz firm tofu Press for 15-20 minutes to remove excess water
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
Aromatics
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
Sauces and Fats
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil For cooking
Seasoning
  • to taste salt
  • to taste pepper
For Serving
  • as needed cooked rice or noodles

Method
 

Preparation
  1. Press the tofu for about 15-20 minutes to remove excess water, then cut it into cubes.
Cooking
  1. Heat the olive oil in a wok or large skillet over medium-high heat.
  2. Add the tofu cubes and cook until golden brown on all sides, about 7-10 minutes.
  3. Add the minced garlic and ginger, and stir-fry for about 1 minute.
  4. Add the broccoli, bell peppers, and carrots, and continue to stir-fry until the vegetables are tender-crisp, about 5-7 minutes.
  5. Pour in the soy sauce and season with salt and pepper. Stir well to combine.
Serving
  1. Serve hot over cooked rice or noodles.

Notes

Tofu Stir Fry is best served hot right after cooking. For an extra touch, consider garnishing with sesame seeds or chopped green onions. It's also great for meal prep and tastes wonderful even when reheated.
