Preparation
- Turn on the Instant Pot and set it to the 'Sauté' mode. Add the olive oil.
- Once the oil is hot, add the chopped onion and garlic. Sauté until the onion becomes soft, about 2-3 minutes.
- Add the beef cubes to the pot and brown them on all sides, about 5-7 minutes.
- Stir in the carrots, potatoes, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
Cooking
- Close the lid of the Instant Pot and set it to 'Manual' for 35 minutes.
- Once done, allow the pressure to release naturally for about 10 minutes, then perform a quick release for any remaining pressure.
- If you want a thicker stew, mix cornstarch with a little water and stir it into the stew. Set the Instant Pot to 'Sauté' mode again and cook for a few more minutes until it thickens.
Serving
- Serve hot and enjoy your beef stew in a bowl, paired with crusty bread or over rice. Optionally, sprinkle with fresh parsley for a pop of color.
Notes
For more flavor, sear the beef in batches instead of all at once. Feel free to add more vegetables like peas or green beans for extra nutrition. For a bit of spice, add a dash of hot sauce or red pepper flakes.
