Ingredients

  • 1 cup brown rice (or quinoa)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
Fresh Toppings
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 tomato, diced
  • 1 small red onion, diced
  • Fresh cilantro for garnish
  • Lime wedges for serving
Seasonings
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Method
 

Preparing the Rice
  1. Cook the brown rice according to package instructions.
Cooking the Vegetables
  1. In a pan, add the black beans, corn, diced red bell pepper, cumin, chili powder, salt, and pepper.
  2. Cook over medium heat for about 5-7 minutes, until heated through.
Assembling the Bowl
  1. Once the rice is cooked, divide it into serving bowls.
  2. Top each bowl with the bean and corn mixture, diced tomatoes, red onion, and sliced avocado.
  3. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

For a fun experience, allow everyone to assemble their own bowls. Store leftovers in an airtight container for up to three days. Keep avocado separate to avoid browning.
