Preparation
- Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
- Add the sliced carrots and mushrooms. Cook for 4-6 minutes until they become tender.
- Incorporate the broccoli, bell peppers, snow peas, water chestnuts, and baby corn along with 2 tablespoons of water. Cook for another 3-5 minutes until all the vegetables are tender.
Flavoring
- Stir in the minced garlic and ginger; season with salt and pepper.
- In a mixing bowl, whisk together the vegetable broth, soy sauce, and honey. Pour this mixture over the sautéed vegetables and cook for an additional 30 seconds.
- For thickening, mix the cornstarch with one tablespoon of cold water until smooth. Add this to the pan while bringing the mixture to a boil. Cook for one more minute until slightly thickened.
Serving
- Serve immediately over rice or your choice of side.
Notes
Vegetable Stir Fry is best served hot. You can serve it over cooked rice, quinoa, or noodles for a complete meal. Adding a sprinkle of sesame seeds or chopped green onions can enhance the flavor and presentation.
