  • 4 large eggs Large eggs for scrambling
  • 1/2 cup bell peppers, diced Any color of bell peppers can be used
  • 1/4 cup onion, diced Use yellow or red onion for sweetness
  • 1/2 cup spinach, chopped Fresh spinach is recommended
  • 1/4 cup shredded cheese Optional, add if desired
  • 4 whole wheat tortillas Whole wheat for added nutrition
  • to taste Salt and pepper Use to enhance flavor
  • 1 tablespoon Olive oil or cooking spray For sautéing vegetables

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat.
  2. Add diced onion and bell peppers, and sauté until soft.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk the eggs with salt and pepper.
  5. Pour the eggs into the skillet and scramble with the vegetables until fully cooked.
  6. If using cheese, sprinkle it on top and let it melt.
  7. Divide the egg mixture into the tortillas, wrap them up, and enjoy.
  8. Optionally, serve with salsa or avocado.

Notes

Use any vegetables you have on hand; zucchini or tomatoes work great. For added flavor, try adding spices like cumin or chili powder to the eggs. If you want a little kick, include jalapeños or your favorite hot sauce.
