  • 1/2 cup feta cheese (crumbled) Use fresh feta for the best flavor.
  • 2 tablespoons olive oil Extra virgin olive oil is recommended.
  • 1 tablespoon lemon juice Freshly squeezed lemon juice is preferred.
  • A small handful fresh mint leaves (chopped) Experiment with other herbs like basil or cilantro.
  • A pinch salt (optional, depending on feta) Feta is already salty; taste before adding.
  • A pinch black pepper Freshly ground black pepper is best.

  1. Start by cutting the watermelon into medium-sized cubes, making sure to remove any seeds if needed, and place them gently in a large bowl.
  2. Wash your cucumber well, then slice or dice it based on your preference, and add it to the bowl with the watermelon.
  3. Crumble the feta cheese over the top, leaving it in small chunks for nice texture.
  4. Sprinkle the chopped fresh mint over everything evenly.
  5. In a small bowl, mix the olive oil and lemon juice together, then slowly pour this dressing over the salad.
  6. Gently toss everything together using a large spoon, being careful not to break the watermelon.
  7. Taste the salad and add salt and black pepper as desired.
  8. Let the salad sit for a few minutes before serving for the flavors to blend.

Notes

Serve this salad chilled as a side dish or a light lunch. Store leftovers in an airtight container in the fridge for about a day.
