  • 1 cup cottage cheese Use fresh cottage cheese
  • 1/2 cup milk Can substitute with almond milk
  • 2 large eggs Room temperature
  • 1/4 cup honey or sugar Adjust sweetness to taste
  • 1/2 cup lemon juice Freshly squeezed for best flavor
  • 1 tablespoon lemon zest Zest of 1 lemon
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour
  • 1/4 cup poppy seeds For crunch
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the cottage cheese, milk, eggs, honey or sugar, lemon juice, and lemon zest until well combined.
  3. In another bowl, whisk together the flour, poppy seeds, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill the muffin cups about two-thirds full with the batter.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let cool for a few minutes before transferring the muffins to a wire rack to cool completely.

Notes

These muffins are delicious served warm or at room temperature. They pair wonderfully with a cup of tea or coffee. Store in an airtight container at room temperature for up to two days, or freeze for up to three months.
