Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the cottage cheese, milk, eggs, honey or sugar, lemon juice, and lemon zest until well combined.
- In another bowl, whisk together the flour, poppy seeds, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill the muffin cups about two-thirds full with the batter.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring the muffins to a wire rack to cool completely.
Notes
These muffins are delicious served warm or at room temperature. They pair wonderfully with a cup of tea or coffee. Store in an airtight container at room temperature for up to two days, or freeze for up to three months.
