  • 2 medium zucchinis Cut into chunks
  • 2 cloves garlic Use roasted for stronger flavor if desired
  • 2 tablespoons tahini
  • 2 tablespoons olive oil Add more if the hummus thickens over time
  • 1 Juice of 1 lemon Adjust based on preference
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional, for garnish) Use parsley or cilantro

Method
 

Preparation
  1. Cut the zucchinis into chunks and place them in a food processor.
  2. Add garlic, tahini, olive oil, lemon juice, salt, and pepper.
  3. Blend until smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a bowl and garnish with fresh herbs if desired.
Serving
  1. Serve with assorted vegetables like carrots, cucumbers, or bell peppers, and pita chips.

Notes

Store any leftover zucchini hummus in an airtight container in the refrigerator for 3 to 5 days. Add olive oil or water to adjust the consistency if it thickens over time.
