Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until soft.
- Add ground turkey to the skillet, cooking until browned.
- Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Let simmer for 10 minutes.
Assembly
- In a baking dish, layer zucchini slices, turkey mixture, ricotta, and mozzarella, repeating layers.
- Finish with a layer of mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it sit for 10 minutes before serving.
Notes
Serve Zucchini Lasagna with Ground Turkey warm, paired with a fresh green salad or garlic bread. Add fresh basil or parsley for extra flavor. For a vegetarian version, omit ground turkey and add more vegetables like bell peppers or mushrooms.
