Ingredients
  

Vegetables
  • 3 medium zucchinis, sliced
  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
Tomato Mixture
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
Cheeses
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
For Cooking
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until soft.
  3. Add ground turkey to the skillet, cooking until browned.
  4. Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Let simmer for 10 minutes.
Assembly
  1. In a baking dish, layer zucchini slices, turkey mixture, ricotta, and mozzarella, repeating layers.
  2. Finish with a layer of mozzarella and Parmesan on top.
  3. Cover with foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  5. Let it sit for 10 minutes before serving.

Notes

Serve Zucchini Lasagna with Ground Turkey warm, paired with a fresh green salad or garlic bread. Add fresh basil or parsley for extra flavor. For a vegetarian version, omit ground turkey and add more vegetables like bell peppers or mushrooms.
