Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Should be softened but not melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup diced apples (peeled and cored) Tart apples like Granny Smith preferred
  • 1/2 cup chopped walnuts or pecans (optional) Feel free to omit if preferred

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, combine oats, flour, cinnamon, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Fold in the diced apples and nuts (if using).
Baking
  1. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them in a freezer bag for up to three months.
