- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Pat the shrimp dry, then toss with olive oil, Cajun seasoning, smoked paprika, garlic powder, black pepper, and salt until evenly coated.
- Wrap each shrimp around a slice of smoked beef sausage and thread them onto the skewers, repeating until all the shrimp and sausage are used.
- In a small bowl, combine the melted butter, garlic, Cajun seasoning, smoked paprika, red pepper flakes if using, honey, lemon juice, and parsley.
- Preheat the grill to medium-high heat. Grill the shrimp skewers for 2 to 3 minutes per side, brushing generously with the Cajun garlic butter as they cook.
- Brush the shrimp skewers with a little more garlic butter, garnish with fresh parsley, and serve with lemon wedges.
