Casey’s Breakfast Pizza

Ingredients
  

Pizza Base
  • 1 lb refrigerated pizza dough, at room temperature
  • 1 tbsp olive oil For brushing on the dough
Toppings
  • 1 cup frozen shredded hash browns, thawed
  • 1 cup shredded mild cheddar cheese
  • 8 oz beef breakfast sausage, casings removed
  • 4 large eggs
  • 2 tbsp milk or cream For the egg mixture
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh chives or parsley (optional) For garnish
  • to taste Salt and black pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Lightly grease a 12-inch pizza pan or baking sheet.
  2. Stretch the pizza dough into a circle or rectangle to fit the pan. Brush lightly with olive oil and pre-bake for 7–8 minutes until it’s lightly puffed.
  3. While the crust bakes, cook the sausage in a skillet over medium heat, breaking it up with a spoon until it’s browned and crumbly. Drain any excess fat and set aside.
  4. In a bowl, whisk the eggs with milk, salt, and pepper. Scramble them in a lightly greased skillet over medium-low heat until just set but still soft. Remove from heat.
Assembly and Cooking
  1. Sprinkle the partially baked crust with the thawed hash browns, then top with the cooked sausage and scrambled eggs.
  2. Sprinkle both cheeses evenly over the top.
  3. Bake for 12–15 minutes, until the crust is golden and the cheese is bubbly. If desired, broil for 1–2 minutes for extra browning.
Serving
  1. Sprinkle with chives before slicing and serving hot.

Notes

For a crispier crust, bake it a bit longer in the initial pre-baking stage. Feel free to add your favorite veggies like bell peppers or spinach for added flavor and nutrition. To save time, you can use pre-cooked sausage or diced ham instead of raw sausage. Store leftovers in an airtight container in the refrigerator for up to 3 days.
