  • 2 cups cooked chicken, shredded Use leftover chicken to save time.
  • 1 cup cilantro, chopped You can substitute with parsley if desired.
  • 2 limes Juice of 2 limes Adjust based on your taste preference.
  • 1 cup rice, cooked You can substitute with quinoa or cauliflower rice for a low-carb option.
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese Feel free to experiment with different types of cheese.
  • 4 large flour tortillas
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine shredded chicken, cilantro, lime juice, rice, black beans, corn, and cheese. Season with salt and pepper to taste.
  2. Lay out a flour tortilla and place about 1/4 of the chicken mixture in the center.
  3. Fold the sides of the tortilla inwards and then roll from the bottom up to enclose the filling.
  4. Repeat with remaining tortillas and filling.
  5. To freeze, wrap each burrito in foil or plastic wrap and store in the freezer.
  6. To reheat, unwrap and place in a microwave or an oven until heated through.

Notes

Slice burritos in half to serve and top with additional cilantro, diced tomatoes, avocado, or a sprinkle of lime juice. Serve with salsa or sour cream for dipping. Store leftovers wrapped in foil or plastic wrap in an airtight container or zip-top bag for up to 3 days in the refrigerator. For longer storage, freeze burritos.
