  • 1 cup Medjool Dates (soaked and pitted) Soak in warm water if hard.
  • 1 cup Desiccated Coconut Plus an additional 1/2 cup for coating.
  • 1 tablespoon Lemon Zest (freshly grated)
  • 1/2 cup Raw Cashews
  • 2 tablespoons Chia Seeds
  • 2 tablespoons Honey or Maple Syrup (optional) Use maple syrup for a vegan option.
  • 1 tablespoon Lemon Powder (optional)

Method
 

Preparation
  1. Begin by soaking the Medjool dates in warm water for about 10 minutes if they are hard.
  2. Drain the dates and place them in a food processor along with the cashews, desiccated coconut, lemon zest, chia seeds, and honey or maple syrup (if using).
  3. Blend the mixture until it’s well combined and forms a sticky dough.
  4. If the mixture is too dry, add a little water. If it’s too wet, add a bit more coconut.
  5. Scoop out small amounts of the mixture and roll them into balls, about the size of a tablespoon.
  6. Roll each ball in the additional desiccated coconut to coat them.
  7. Place the balls in the fridge for at least 30 minutes to firm up.

Notes

Store in an airtight container in the refrigerator for up to one week. For longer storage, freeze for up to three months. Allow to thaw for a few minutes before enjoying.
