  • 1/2 cup protein powder (vanilla or unflavored) Choose your preferred flavor
  • 1/4 cup honey or maple syrup Sweetener of choice
  • 1/4 cup lemon juice Freshly squeezed is best
  • 1 large lemon zest Adds extra lemon flavor
  • 1/4 cup almond butter or peanut butter Provides healthy fats
  • 1/4 cup mix-ins (e.g. poppyseeds, blueberries, coconut, cranberries, chia seeds) Tailor to your preferences

Method
 

Preparation
  1. In a bowl, combine almond flour, protein powder, honey or maple syrup, lemon juice, lemon zest, and almond butter.
  2. Stir until well mixed.
  3. Fold in your choice of mix-ins.
  4. Roll the mixture into small balls.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes until firm.

Notes

These protein balls can be enjoyed straight from the fridge! Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
