Bread Ingredients
  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.75 cup brown sugar, packed
  • 2 eggs
  • 0.33 cup vegetable oil
  • 0.25 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup zucchini, grated and squeezed dry Squeeze out excess moisture.
  • 0.5 cup pecans, chopped
Praline Crown Ingredients
  • 3 tbsp butter
  • 0.33 cup brown sugar
  • 2 tbsp heavy cream
  • 0.75 cup pecan halves

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the brown sugar, eggs, vegetable oil, buttermilk, and vanilla extract.
  4. Stir in the grated zucchini and chopped pecans.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and bake for about 50-60 minutes or until a toothpick comes out clean.
  2. While the loaf is baking, melt the butter in a saucepan to make the praline crown.
  3. Add the brown sugar and heavy cream in the saucepan, stirring until it reaches a smooth consistency.
  4. Stir in the pecan halves and set aside until the bread is done.
  5. Once the loaf is baked, drizzle the praline mixture over the top while it is still warm.

Notes

Serve warm or at room temperature. For added festivity, dust with powdered sugar before serving. Pairs nicely with coffee or tea.
