Preparation
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, prepare the brownie mix according to the package instructions, adding the eggs and vegetable oil.
- Pour half of the brownie batter into the prepared pan.
Cheesecake Layer
- In another bowl, mix the softened cream cheese, sugar, and vanilla until smooth.
- Spread this mixture over the brownie layer.
- Scatter fresh raspberries and optional chocolate chips on top of the cream cheese layer.
- Pour the remaining brownie batter over the raspberries and cream cheese, spreading it evenly.
Baking
- Bake for 45-50 minutes or until the brownies are set.
- Allow it to cool before removing it from the springform pan.
- Chill in the refrigerator for at least one hour before serving.
Notes
This dessert looks stunning on the table and can be served with a dollop of whipped cream or a scoop of vanilla ice cream. Garnish with extra fresh raspberries for a beautiful presentation.
