Ingredients
  

Main Ingredients
  • 1 lb Fresh salmon Cooked and flaked
  • 1 cup Grated carrots
  • 1 cup Sautéed onions
  • 1 cup Breadcrumbs You can use gluten-free breadcrumbs if needed
  • 2 large Eggs
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper Adjust to taste
  • 1 tbsp Lemon juice Freshly squeezed
  • 2 tbsp Herbs Fresh dill or parsley, chopped

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the fresh salmon (cooked and flaked), grated carrots, sautéed onions, breadcrumbs, eggs, salt, pepper, and lemon juice.
  3. Form the mixture into patties.
  4. Place the patties on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 20-25 minutes, or until the patties are cooked through and golden brown.
  2. Serve warm, garnished with fresh herbs.

Notes

These salmon patties are best served warm. You can serve them with a side of fresh salad, steamed vegetables, or a dollop of sour cream. They can also be paired with rice or quinoa for a full meal.
