  • 1 cup nuts (e.g., almonds, walnuts)
  • 1/2 cup seeds (e.g., pumpkin, sunflower)
  • 1 cup mashed ripe bananas
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Optional: dried fruits, chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, nuts, seeds, cinnamon, and salt.
  3. In another bowl, combine the mashed bananas, maple syrup, melted coconut oil, and vanilla extract. Stir to combine.
  4. Pour the wet ingredients into the dry ingredients and mix until well coated.
  5. Spread the mixture evenly on the prepared baking sheet.
Baking
  1. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  2. Remove from the oven and let it cool completely before adding any optional ingredients like dried fruits or chocolate chips.

Notes

Store in an airtight container for up to two weeks. Use ripe bananas for a natural sweetness. Stir the granola halfway through baking for even cooking and browning. Feel free to experiment with different nuts, seeds, or spices.
